Ice Cream Sundae Cake

A summer favorite

With the summer season in full effect I thought there was no better time to share a family favorite. What I love about this recipe is that it requires only 5 ingredients, takes no more than 10 minutes and requires zero cooking! I am a sucker for anything ice cream and this recipe is fool proof. I promise!


  1. Arrange 12 ice cream sandwiches in the bottom of a 9 x 13-inch dish. As you can see from the photo below, you will need to cut the last ice cream sandwich in half in order to get it to fit in the pan. Trust me -- this doesn't have to be perfect (it will still taste amazing)!
  2. Allow the ice cream sandwiches to soften a bit, and then use the back of a spoon (or your fingers) to gently press them down a little bit. You can skip this step if you're using a particularly deep pan.
  3. Top the first layer of ice cream sandwiches with a layer of whipped topping, drizzle with chocolate and caramel syrups, and sprinkle with toppings of choice. I have used everything from chopped nuts, sprinkles, Reese's peanut butter cups.... go wild!
  4. Repeat the layers once more, using the remaining Cool Whip to "frost" the top of the cake.
  5. Freeze the homemade ice cream sandwich cake for at least 1-2 hours or overnight, until firm.


Ice Cream Sundae Cake Recipe


This 5 ingredient Ice Cream sandwich cake is a no-fuss treat that takes just minutes to prep. 

Prep Time:  10 minutes

Cook time:  Nada, Zero

Chill time:  1-2 hours or overnight, Can be made ahead of time.

Servings:  15-22


Ingredients

  • 24 Ice cream sandwiches (your flavor of choice) 
  • 16 ounces frozen whipped topping (I use Cool Whip)
  • Chocolate Syrup
  • Caramel Syrup
  • Topping of choice (let your imagination run wild) 

Instructions

  1. Layer 12 ice cream sandwiches in the bottom of a 9x13 inch dish. You may need to cut the last ice cream sandwich in half in order to find the bottom of the dish. 
  2. Spread half of the whipped topping over the ice cream sandwiches. Drizzle with chocolate and caramel syrup, sprinkle with desired toppings
  3. Top with the remaining 12 sandwiches and repeat steps layering with whipped topping and toppings, you can drizzle syrups as well. It's totally up to you. 
  4. Freeze for 1-2 hours (or overnight) to let the cake firm up before slicing.
